About Our Beer

Why is your yeast so special and unique?
Our alt beer yeast is so unique because...it is so unique! Our yeast is our own proprietary pure culture. It has seen hundreds of years of use in brewing in Germany and is maintained in our own lab.

What is the difference between ale and lager?
Ales use a top fermenting ale yeast and are fermented at a relatively high temperature (65-70 F). They use traditional Ale hops and tend to be estery (almost sweet or fruity) in character, a result of using ale yeast.

Lagers use bottom fermenting lager yeast and are fermented as low as 35F depending on the yeast strain. Lagers are cold-aged longer than ales (to "lager" means to age), tend to be crisper and dryer than ales and use traditional Lager hops.

What are the different kinds of ales?
Amber Ales range from light copper to light brown in color. They have a medium body, medium to high maltiness and medium to low caramel character.

Pale Ales/IPAs range from deep golden to copper in color. This style is characterized by a high hop bitterness, flavor and aroma. Pale Ales and IPAs have medium to heavy bodies with medium to low maltiness. Fruity hop flavor and aroma should be moderate to strong.

Wheat/American Hefeweizens range from light straw to light amber in color. They have a fruity and crisp aroma and the body is light to medium in character. This style of beer is generally left unfiltered and has a hazy to cloudy appearance.

Blonde Ales are straw to golden in color. They have a crisp, dry palate and mild hop floral aroma, light to medium body and a light malt sweetness. Bitterness is low to medium.

Porters/Stouts are black in color and have a robust malt flavor. They range from medium to full in body and have a strong malt profile. Hop bitterness can be medium to high with aroma being light to medium.
